
Of all veggies, zucchini is so easy to prep (plus, it’s green!). Basil and garlic are super foods. To eat more veggies, try planning your meal around them instead of the protein. This recipe is a great one to start with! Add steamed or broiled fish on the side to get your protein.
Shopping List
1 lb. fettucini or other dried pasta
1 lb. zucchini
2 cloves garlic
handful of fresh basil leaves
2 oz. butter
3/4 c. olive oil
Parmesan or other cheese
Salt and pepper
How To
Follow the instructions on the package to cook the pasta.
Meanwhile, grate the zucchini and cut basil leaves into strips.
Peel and crush the garlic.
Drain the pasta in a collander and rinse with cold water.
Use the same pan to melt the butter on low-medium heat.
Add the olive oil and garlic; saute until garlic is golden, a minute or less.
Add zucchini and basil and saute 2-3 minutes.
Salt and pepper to taste.
Stir the pasta into the mixture in the pan.
Serve warm, topped with grated Parmesan or other cheese.
