You’ll love this super easy to cook and cleanup, high protein main dish. After dinner just dispose of anything you don’t want to save for another meal! Best in the summer with a cucumber salad and potatoes.
Shopping List
1 package of chicken leg & thigh (all in one piece) – 1, 2, or 4 to a pack
Bottle of barbecue, spicy Asian or other tomato-based sauce
Tin foil
How To
Preheat oven to 390 degrees.
Line 9×13 baking pan with foil
Rinse each leg & thigh set and place skin-side-up in pan.
Cover with sauce. You’ll need about 1/4 to 1/2 bottle depending on number of chicken pieces.
Bake, uncovered, for at least 70 minutes.
Test for doneness by removing from oven and cutting into the thickest part.
There should be no pink or red and any juices should be pretty clear.
If needed, return pan to oven and check every 10 minutes until done.
1 to 2 servings per leg & thigh piece.
